Melted unsweetened chocolate gives the base a deep, bittersweet intensity, while creamed butter and sugar keep things rich. Chopped walnuts add crunch to every thin, crispy slice.
This is a slice-and-bake recipe, so you roll the dough into a log, chill it, and cut rounds whenever you’re ready to bake. Keep a roll in the freezer and you’re always 15 minutes away from warm cookies.
Kitchen Tips
- Let the Dr. Pepper go flat before adding to the dough so it doesn’t create air pockets
- Cool the melted chocolate slightly before blending into the butter mixture so it doesn’t melt the butter too fast
- Chill the dough log until firm for the cleanest, most even slices
- These are meant to be thin and crispy; slice about ¼ inch thick for the best texture
