Black Bean Brownies

1/2 c. chocolate chips, melted
3/4 can of black beans, drained
2 eggs
1/2 c. vegetable oil
1 t. vanilla
1/4 c. cocoa
2/3 c. sugar
1 t espresso powder (optional)
1/3 c. flour
1/2 t. baking powder
1/2 t. salt

Directions
- Melt the chocolate chips.
- Purée beans, eggs, and veg. oil in a blender. Place into mixing bowl. Mix in melted chocolate and vanilla.
- In another large bowl, combine cocoa, sugar, espresso powder, flour, baking powder, and salt.
- Pour puréed bean mixture over dry ingredients and stir just until combined. Mixture will be very thick.
- Place in greased 9x9 baking pan and bake at 350℉ (180℃) for 20 minutes.
