Crustless Tuna Quiche

868db2f272196a767469 550

An upscale low-carb, gluten-free version of an easy tuna casserole. Whip together an easy crustless tuna quiche with just cheese, eggs and milk.

2 large tuna, canned
6 ounce cans, in water, drained
1 cup swiss cheese
1 medium onions
2 tablespoons all-purpose flour
2 large eggs
2 large egg whites
1 cup milk, skim
¾ teaspoon salt
teaspoon red pepper flakes

Heat oven to 350℉ (180℃).

Spray a 9-inch (23 cm) pie plate, with non-stick cooking spray.

In a bowl, toss together the tuna, swiss cheese, onion, and flour; spread evenly in pie plate.

Beat the eggs and egg whites slightly in a small bowl with a fork; then beat in remaining ingredients.

Pour the egg mixture over the tuna mixture.

Bake the quiche, uncovered, for 35 to 40 minutes or until knife inserted in center comes out clean.

Let stand 10 minutes before cutting.

Delicious! I added one shredded carrot, 1/4 red bell pepper shredded, 6 green olives cut in little pieces, and mixed the cheese, half mozzarella, half cheddar. 1/4 cup of parmesan cheese on top.

Didn't enjoy it at all. Added celery and red pepper. Took way longer to cook than noted time. Was very watery. Ate it because we were hungry. Would not make again.

Great easy to make easy to follow recipe. I added a tin of corn and it worked a charm. Used a rectangular baking dish and turned out just fine. Delicious meal with a fresh garden salad. Will post a photo when I get a chance.

Thank you

You add FLOUR and claim it to be gluten-free? Let's try again, shall we?

Thanks for your comment. Just edited the recipe, and you are right. Gluten free shouldn’t be one of the categories! Happy cooking :)

Used coconut flour, cappers and capsicum, with olives for a Mediterranean touch. Finished with boccincini in the mix and parmesan cheese on top

This has become a firm favourite in our family. I use cheddar cheese instead of Swiss Cheese, Left over yolks go into baking items, or scrambled eggs. (South Africa)
