Crowd Chicken Casserole















Trans-fat Free, Low Carb


10 cups chicken
cooked, diced
10 cups celery
2 bunch scallions, spring or green onions
with tops. sliced
8 ounces green chili peppers, canned
5 ¾ ounces olives
ripe, pitted, drained, sliced
2 cups almonds
5 cups cheddar cheese
shredded, divided
2 cups mayonnaise
2 cups sour cream
5 cups potato chips


Combine the first six ingredients.

Add 2 cups cheese.

Mix mayonnaise and sour cream; add to chicken mixture and toss.

Spoon into two greased 13x9x1 inch baking dish es.

Sprinkle with chips.

Top with remaining cheese.

Bake, uncovered, at 350℉ (180℃) F for 20 to 25 minutes or until hot.
