Ingredients

2 cups all-purpose flour
unsifted
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup sugar
1 each eggs
beaten
½ cup orange juice
1 each orange zest
grated

2 tablespoons butter
melted
2 tablespoons water
hot
1 cup cranberries
whole, raw
1 cup walnuts
coarsely chopped

Directions

Combine flour, baking powder, soda, salt and sugar in a large mixing bowl and set aside.

Mix beaten egg with orange juice, rind, butter, and hot water.

Fold flour mixture into egg mixture until blended.

Do not beat.

Gently fold in cranberries and walnuts.

Spoon into greased 9 inch X 6 inch loaf pan, or smaller pans of choice.

Bake at 325 for 60 minutes; test in center with a toothpick.

Cool on rack for 15 minutes before removing from pan.
