TEASPOON ML ALLSPICE

EACH EACH EGGS
beaten
¼ 1.3
TEASPOON ML ORANGE ZEST

or margarine

Directions

Coarsely chop cranberries, sprinkle with ¼ cup sugar & set aside.

Preheat oven to 375F, prepare pans.

Combine flour, ¼ cup sugar, baking powder, salt, cinnamon & allspice. In another bowl combine egg, orange rind & juice and melted butter. Add dry mix to wet mix & stir to moisten. Fold in cranberry mixture & nuts.

Spoon into pans & bake for 15 to 20 minutes or until golden.

Makes 9 large muffins.

Would you use dried cranberries or fresh cranberries?

Fresh cranberries are definitely best.

I have made this recipe for years. I always use fresh cranberries that I chop and allow to sit in the sugar like you would strawberries. I also add a bit of vanilla extract and a half a cup of nuts.
