Christmas Morning Cranberry Muffins
A special treat that could be used as a quick breakfast on Christmas Day or as a snack during the holidays.
Ingredients

cranberries

sugar

1 ½ | cup |
all-purpose flour

|
2 | teaspoons |
baking powder
|
|
1 | teaspoon |
salt
|
|
½ | teaspoon |
cinnamon
|
|
¼ | teaspoon |
allspice
|

eggs
beaten |
|
¼ | teaspoon |
orange zest
|
* |
¾ | cups |
orange juice
|
|
⅓ | cup |
butter
or margarine |
|
¼ | cup |
nuts
chopped |
Directions
Coarsely chop cranberries, sprinkle with ¼ cup sugar & set aside.
Preheat oven to 375F, prepare pans.
Combine flour, ¼ cup sugar, baking powder, salt, cinnamon & allspice. In another bowl combine egg, orange rind & juice and melted butter. Add dry mix to wet mix & stir to moisten. Fold in cranberry mixture & nuts.
Spoon into pans & bake for 15 to 20 minutes or until golden.
Makes 9 large muffins.

almost 3 years agoWould you use dried cranberries or fresh cranberries?
almost 3 years agoI have made this recipe for years. I always use fresh cranberries that I chop and allow to sit in the sugar like you would strawberries. I also add a bit of vanilla extract and a half a cup of nuts.
