It’s an easy way to make a simply tasty yet refreshing carrot slaw.

Ingredients

CUPS ML CARROTS
shredded
1 0.9
QUART L WATER
boiling *
½ 0.5
EACH EACH SERRANO CHILES
seeded, minced *

TABLESPOONS ML LIME JUICE
½ 7.5
TABLESPOON ML MAPLE SYRUP
2 3E+1
TABLESPOONS ML CASHEW NUTS
toasted *
1 15
TABLESPOON ML CILANTRO
chopped

Directions

Bring a litre water to a boil in a large saucepan.

Blanch carrots until tender, about 4 minutes.

Drain well.

Combine chili, lime juice and maple syrup in a bowl and whisk with a fork.

Add carrots, cashews and cilantro and toss to mix.

Serve at room temperature or chilled for a few hours or overnight.
