I can't believe how good these are! I generally hate carrots, even though I love most vegetables and eat them every day. I've been looking for a way to cook carrots that would allow me to add them to my diet. This is it! Thanks so much for posting this wonderful recipe!

Low Fat, Low in Saturated Fat, Low Cholesterol, Cholesterol-Free, Trans-fat Free, Low Carb, Low Sodium
 

Ingredients

1 tablespoon canola oil
5 cloves garlic
minced
2 teaspoons paprika
1 teaspoon cumin
ground
1 teaspoon coriander
ground
3 cups carrots
sliced
¾ cup water
2 ½ tablespoons lemon juice
salt
to taste

¼ cup cilantro
freshly chopped

Directions

Heat oil in a large nonstick skillet over medium heat.

Add garlic, paprika, cumin and coriander; cook, stirring, until fragrant but not browned, about 30 seconds.

Add carrots, water, lemon juice and salt; bring to a simmer.

Reduce heat to medium low, cover and cook until almost tender, 5 to 7 minutes.

Uncover and simmer, stirring often, until the carrots are just tender and the liquid is syrupy, 6 to 8 minutes.

Stir in cilantro leaves.

Serve hot.

These were great! (And I generally hate carrots!)
I made these for my family, who generally don't like too many spices. Everyone loved this dish! It was gone almost immediately, even though I thought I made too much.

Will most definitely make it again.

Delicious, our family love carrots, not only they are healthy and nutrinal, but also we have lots of ways to cook them, giving carrots rich flavor, this spiced carrots amazed me, I simmered them longer, just let all the water absorb and almost turned into a thick garlic and spice sauce, stir in fresh cilantro leaves, very delicious.

Great flavor. I am going to make them for Thanksgiving substituting yams for the carrots. Can't wait to try!
