Directions
Preheat oven to 400℉ (200℃).
Mix sausage, bell pepper, onion into skillet and cook until done.
Put mixture into greased 13 x 9 baking dish and add potatoes and 1½ cups of cheese and mix together.
Combine baking mix, eggs, milk and pepper together.
Pour over the meat mixture.
Bake 40 to 45 minutes. Take out of oven and sprinkle rest of cheese over mixture.
Put back in oven and bake additional 2 minutes.
