Black Bean Burgers with Avocado Salsa

Compared to restaurant and store-bought veggie burgers this is the best black bean burger recipe I’ve ever tried. Add a quick avocado salsa for a topping and we're in love.

Low Fat, Low in Saturated Fat, Low Cholesterol, Trans-fat Free, High Fiber

1 small avocados
peeled, pitted, chopped
1 cup salsa
2 cups black beans
2 tablespoons cracked wheat (bulgur)
2 tablespoons sour cream
2 tablespoons scallions, spring or green onions
1 tablespoon parsley leaves
½ teaspoon cumin
1 x salt
1 x cheese
1 x hamburger buns

For the salsa, in a mixing bowl, gently stir together avocado and salsa until well blended.

Cover and refrigerate until ready to use.

For the burgers, combine black beans, bulgur, sour cream, scallion.

Add the parsley, cumin, hot pepper sauce, salt, and black pepper in the bowl of the food processor.

Process until mixture is chopped but not pureed.

Divide and form mixture into 4 burgers.

Wrap and refrigerate about 30 minutes to 1 hour before cooking.

Heat oil in a skillet over medium heat.

Fry burgers in hot oil for about 5 minutes on each side or until brown and crisp.

Place slices of cheese on burgers during the last minute of cooking time.

Serve burgers with salsa and your favorite condiments if desired.
