Even goat cheese haters like these sandwiches when cut in half with cream cheese. The creamy cheeses match up perfectly with asparagus. Cut into triangles color of sandwich is so pretty. They are perfect food at the party!

Ingredients

8 ounces cream cheese
softened
8 ounces goat (chevre) cheese
1 x sea salt
to taste

1 x black pepper
cracked

2 ½ tablespoons chives
chopped
12 slices white bread
crusts removed
12 ounces asparagus
trimmed and blanched
2 ½ tablespoons chives
chopped

Directions

Add the cream cheese, goat cheese, salt and pepper in the bowl of a small food processor and process until smooth.

Stir in the chives.

Spread the cheese mixture over half of the bread slices, press the asparagus into the cheese and sandwich with the remaining bread.

Cut each sandwich into triangles.

Make 12 sandwiches.

We made these sandwiches as oen of the appetizers at the party last weekend, and they were surprisingly good, almost everyone came back for a second or even third or fourth one; they were so easy to make, only a few ingredients, nothing fancy or hard to find, but the result was outstanding. We made the sandwiches the day before the party, kept them in the refrigerator, and they were even better at the party day. If you like asparagus, goat cheese and cream cheese, you really should try this recipe, and the sandwiches look so pretty, they are great for party or when you have company to come over, and they will be impressed!
