Ingredients

Pudding
1 cup all-purpose flour
1 large eggs
beaten
1 cup sugar
½ cups cherry juice

½ teaspoon salt
1 tablespoon butter
melted
15 ounces cherries
tart, 1 can, drain and reserve juice
1 cup walnuts
chopped
1 teaspoon baking soda
mixed with 1 teaspoon water
Sauce
1 cup brown sugar

1 teaspoon vanilla extract
1 teaspoon all-purpose flour
1 teaspoon butter
cherry juice
remaining cherry juice with enough water to measure 1 cup, cook until thick, 5 or 6 minutes.

Directions

Blend together flour, sugar and salt.

Beat egg, add ½ cup cherry juice and melted butter, add baking soda mixture, add to flour, sugar, salt mixture. Mix well.

Add chopped nuts and cherries.

Pour into a greased loaf pan and bake at 350℉ (180℃) for 45 minutes.

Remove from oven and poke holes with a fork and pour hot sauce over pudding.

Cool and refrigerate.

Serve with whipped cream.
