This recipe is a faily old (circa 1983) but reliable one, somwhere in between competition and eating and chili. It would be a good starter for any novice cook.
Jalapeno cheese grits casserole baked with sharp cheddar, pepper jack, eggs, and fresh jalapenos. Creamy, spicy Southern comfort food from the oven.
Chocolate muffins packed with nutrients from an avocado you won't detect and protein from Quinoa Flakes!
Loved the idea of infusing curry, chili powder and cumin seeds in the oil, which made the curry oil so flavorful. The combination of apples, bell peppers, celeries, raisins, and peas (I used peas instead of snow peas) was delicious with the curried rice.
Malaysian pork rib soup simmered with star anise, cinnamon, and white peppercorns in a fragrant dark soy broth. Topped with crispy shallot flakes and served with rice.
A cheese and garlic sauce served over toasted french bread, or any toasted bread. A tasty starter or even light meal.
Chinese-style beef liver stir-fry with fresh tomato wedges, marinated in soy, sherry, ginger, and cornstarch. A protein-rich, iron-loaded weeknight wok dish over rice.
Spaghetti in a fresh tomato sauce brightened with orange juice, garlic, basil, and a dash of hot sauce. A simple vegetarian pasta with an unexpected citrus twist.
It was so flavorful, instead of broth, we used canned tomato. Served the stew with homemade whole wheat bread, yum.
A Korean stir-fried cucumber side dish (banchan) tossed in sesame oil, soy sauce, and chili powder. Quick, savory, and a refreshing change from raw cucumber salads.
Golden-browned chicken simmers with plump shrimp in a velvety red wine and tomato sauce laced with garlic, Italian herbs, and fresh parsley. A rustic Italian-American showstopper for date night or Sunday supper.
Wintry spices make this a rich, creamy, and flavorful holiday favorite!
So to start off with the first post, I decided to make a meal that screams of comfort food. Whilst it does take a bit of a while to get the meal done, once you take that first bite, heaven couldn’t seem closer if you were Adam trying to touch God’s finger in the “Creation of Adam” fresco created by Michaelangelo. The meal I speak of is Cottage Pie. There is much debate as to what exactly a cottage pie is and how it is different to a Shepherd’s pie...I don’t know. The dominant theory is that Sheperds pie uses lamb mince, whilst a cottage pie uses beef mince. I don’t know about you, but the term “Sheperds Pie” does not get my tastebuds going quite as well, so I prefer the term cottage pie. Besides, comparing the price of ground (mince) beef to ground lamb, a student would pick up the beef mince in a heartbeat without even so much as glancing at the lamb in the meat section. This cottage pie that I made is full of flavour, and just makes you want to cuddle up next to a fire and watch TCM movies all day either by yourself, or with a significant other. Here is the recipe:
I make triangles and leave out the mizithra or cottage cheese (too wet for these). Great appetizers if you make them small.
Chickpeas toss with crisp bell peppers, scallions, and cilantro in a cumin-spiked dressing brightened by ginger, garlic, and fresh lemon juice. Chill overnight for a make-ahead potluck winner.
Browned pork chops simmer over curry-spiced rice with raisins and slivered almonds in tomato sauce. A one-skillet dinner with sweet, savory, and nutty flavors in every bite.
