Tamarind Paste

Using fresh Tamarind pods make your own fresh homemade tamarind paste. You can use it in Indian cooking, Thai, Jamaican and Mexican. Add a spoonful to flavor curry, soups or even into meat taco mixes. In India it is used for a soft drink. Sort of like iced tea with an interesting tang or zing.

Ostrich neck Casserole
Ostrich neck Casserole

Ostrich, firstly, is actually a very tasty meat. It tastes somewhat like chicken...lol! Ok, it doesn't taste like chicken, but I couldn't resist the temptation. It is a very lean meat, possibly more lean than beef (therefore a fairly good alternative for those on some form of low cholesterol diet). And lastly, and most importantly, this cut of meat is an inexpensive alternative to the more luxurious ox tail that we seem to reserve for graduations and wedding rehearsals.

Butternut Squash and Cheddar Casserole
Butternut Squash & Cheddar Casserole

This is one of the best butternut squash casserole I have ever made. There were lots of flavors and textures going on. We made half of the recipe, I added some buttermilk powder into milk to make the buttermilk and used the dried thyme, otherwise followed the recipe exactly. It came out cheesy, sweet and tasty, but not too feeling heavy or rich afterwords, definitely a keeper!

New York Lobster Newburg
New York Lobster Newburg

"Lobster Newberg. Also "lobster a la Newburg"...The dish was made famous at Delmonico's Restaurant in New York in 1876 when the recipe was brought to chef Charles Ranhofer by a West Indies sea captain named Ben Wenberg. It was an immediate hit, especially for after-theater suppers, and owner Charles Delmonico honored the capatain by naming the dish "lobster a la Wenberg." But later Wenberg and Delmonico had a falling-out, and the restauranteur took the dish off the menu, restoring it only by popular demand by renaming it "lobster a la Newberg," reversing the first three letters of the captain's name.
