So to start off with the first post, I decided to make a meal that screams of comfort food. Whilst it does take a bit of a while to get the meal done, once you take that first bite, heaven couldn’t seem closer if you were Adam trying to touch God’s finger in the “Creation of Adam” fresco created by Michaelangelo. The meal I speak of is Cottage Pie. There is much debate as to what exactly a cottage pie is and how it is different to a Shepherd’s pie...I don’t know. The dominant theory is that Sheperds pie uses lamb mince, whilst a cottage pie uses beef mince. I don’t know about you, but the term “Sheperds Pie” does not get my tastebuds going quite as well, so I prefer the term cottage pie. Besides, comparing the price of ground (mince) beef to ground lamb, a student would pick up the beef mince in a heartbeat without even so much as glancing at the lamb in the meat section. This cottage pie that I made is full of flavour, and just makes you want to cuddle up next to a fire and watch TCM movies all day either by yourself, or with a significant other. Here is the recipe:
Enjoy summer with a bowl of this rich ice cream that doesn't take long to make! Great with fresh fruit or nuts.
Texas brownie cake, a thin and fudgy sheet cake with a boiled cocoa-butter batter poured over flour, finished with warm chocolate icing and chopped pecans. The Lone Star State's answer to a sheet pan dessert.
Backpack banana bran muffins are portable, fiber-rich snacks made with ripe bananas, bran cereal, brown sugar, and cinnamon. Sturdy enough to survive a school lunch or hike, soft enough to enjoy.
These delicious, moist yet healthy muffins are ideal breakfast muffins. Have them with a cup of orange milk, orange juice or your morning coffee.
Curried pumpkin and ginger scones with warm curry spice, golden turmeric, and chewy bites of crystallized ginger. A savory-sweet fall bake that lands somewhere between brunch and tea time.
Use solid white tuna, not chunked tuna. To keep the tuna moist this recipe uses a quick marinade to allow the tuna to absorb the flavors.
Creamy watermelon sherbet churned with evaporated skim milk, lemon juice, and a touch of gelatin for silky smooth scoops. A lighter frozen treat that captures peak summer melon flavor.
Apricot brandy pound cake with sour cream, four extracts, and a fragrant boozy crumb. A tall tube-pan cake with a tight golden crust and tender, custardy interior.
This simply delicious Chinese stir-fry is made with not too many ingredients, it's quick and easy as well. Serve it with a bowl of rice to complete the meal.
A delicious breakfast or brunch can be prepared the night before. You will love how good your house smells when you bake it in the oven the next day.
Candied dill pickles transformed from store-bought dills into sweet-tart spears with sugar, vinegar, bay, and cloves. The Southern grandma trick that turns ordinary pickles into addictive snacking.
Lemony cranberry cornmeal muffins balance tart fresh cranberries against bright lemon zest in a cornmeal-buttermilk batter, kept light by whipped egg whites and non-fat sour cream.
Old-fashioned drop donuts, spoon-dropped into hot oil for craggy, irregular shapes with crisp edges and tender, nutmeg-spiced centers. Dusted with powdered sugar, makes three dozen.
Fudgy double-chocolate brownies studded with gooey marshmallow pockets, chocolate chunks, and raisins, and sweetened with a touch of maple syrup. Rich, melty squares for serious chocolate lovers.
Sweet butternut squash soup with apples, carrots, brown sugar, and a hint of cinnamon, finished with skim milk for a low-fat creamy texture. The cozy fall soup that tastes like autumn in a bowl.
