Watermelon, Mint and Feta Salad with Citrus Dressing

Juicy and sweet watermelon cubes are tossed with fresh mint leaves, feta cheese and a light yet tasty citrus dressing made with orange juice, lemon juice, extra-virgin olive oil, and a bit shallots. Use any kind of your favorite greens as a base. A great summer salad.

prepared, or baby spinach, or mixed greens

1.4 l watermelon
cut into 2-inch cubes, cold

118 ml feta cheese
cubed

Directions

Add dressing ingredients into a small bowl, whisk until well blended.

Keep dressing refrigerated until ready to use.

Add watermelon, feta cheese, and mint into a large bowl, and mix well.

Pour dressing over salad.

Gently toss until evenly coated and well combined.

Divide greens among individual serving plates.

Top each plate with equal amount of watermelon salad.

Serve.
