Watermelon, feta cheese, olives and mint together make a delicious and refreshing salad that's perfect on a hot summer day!

Ingredients

½ cup red onion
thinly sliced, up to 3/4 cup
1 tablespoon lime juice
fresh
1 ½ quarts watermelon
seeded and cubed

½ cup feta cheese
crumbled, up to 3/4 cup
½ cup black olives
pitted and sliced

½ cup mint leaves
freshly chopped
*
1 ½ tablespoons olive oil, extra-virgin

Directions

Combine the onion slices in a small bowl with the fresh lime juice. Let stand for 10 minutes.

In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint.

Drizzle olive oil, and toss to blend.

Serve and enjoy!

Nothing is better than a cold and refreshing watermelon salad in a hot day. This salad was so light, refreshing and absolutely tasty. Loved the combination of watermelon, feta. olives and mint. It takes no time, and delivers all the goodness.
