1 hrsThis turkey curry is the mild, creamy kind that works for families where not everyone loves serious heat. Ground turkey gets browned and folded into a flour-thickened curry sauce with sauteed apple and onion, giving the whole dish a gentle sweetness that balances the warm spice.
The sauce builds from a simple roux of olive oil, flour, and curry powder. Milk and bouillon get whisked in gradually until everything thickens into a velvety coating for the meat. The chopped apple softens but keeps a bit of texture, adding little pockets of fruity sweetness throughout.
Serve it over raisin rice and the sweet-savory thing really comes together. The plump raisins echo the apple in the curry and give each bite a little surprise.
Pro Tips
- Brown the turkey in batches if your pan is crowded. Overcrowding steams the meat instead of browning it, and you’ll lose that caramelized flavor.
- Add the milk mixture slowly, whisking constantly. Dumping it all in at once can cause lumps in the sauce.
- Leave the apple skin on. It holds the pieces together during cooking and adds a bit of color to the finished dish.
Variations
- Swap ground turkey for ground chicken or diced leftover Thanksgiving turkey.
- Add a handful of frozen peas in the last 5 minutes for color and a pop of green sweetness.
- Stir in a spoonful of mango chutney at the end for a tangier, more complex sauce.
Ingredients
Directions
In a small sauté pan, sauté the turkey over Medium-High heat, stirring frequently, until browned evenly.
Drain the turkey on paper towels andset aside.
Spray a wide nonstick skillet with vegetable oil spray.
Over Medium heat, sauté the apple and onion, stirring frequently, until the onion is translucent.
Set aside.
In another large skillet, heat the olve oil over Low heat just until it is warm.
Stir in the flour and curry powder. Heat and stir over Medium-Low heat until the flour begins to bubble. Combine the bouillon granules, dry milk and skim milk; whisk until combined. Gradually add the milk mixture to the curry mixture, continuing to stir over Medium-Low heat until the mixture thickens. When the mixture is thick, add the turkey and the apple-onion mixture. Stir well and heat through. Serve over Raisin Rice.
