The combination of mozzarella and cottage cheese is the secret to the texture here. Mozzarella delivers the melty, stretchy quality you want from a cheese sauce, while pureed cottage cheese adds body, protein, and a subtle tang without the heaviness of heavy cream. Pureeing the cottage cheese first is essential; lumpy cottage cheese leaves grainy bits in the finished sauce.

Directions
