This turkey meatloaf cooks itself in the slow cooker while you’re at work. Two pounds of ground turkey get mixed with horseradish and chili sauce for a loaf that has real backbone, not the bland, dry meatloaf that gives turkey a bad name.

The horseradish is the ingredient that sets this apart. It fades during the long, slow cook but leaves behind a warm, peppery depth that you can’t quite identify but keeps you reaching for another slice. Chili sauce adds sweetness and a hint of tomato tang on top of that.

Bread crumbs and milk keep the texture moist through the long cooking time, and eggs bind everything so the loaf holds its shape. Use a meat rack or foil handles so the loaf sits above its drippings instead of stewing in them.

Chef Tips

  • Shape the loaf slightly smaller than your slow cooker insert so air circulates around it. A loaf pressed against the walls steams instead of roasting.
  • Foil handles (two long strips crossed under the loaf) make removal easy. Just lift straight up when it’s done.
  • Check with a meat thermometer. Ground turkey needs to hit 165°F (74°C) internally for safety.
  • Let the loaf rest 10 minutes before slicing so it firms up and the juices redistribute.

Variations

  • Top with extra chili sauce or ketchup glaze during the last hour of cooking for a sticky, caramelized finish.
  • Mix in diced bell peppers and a pinch of cayenne for a spicier kick.
  • Serve with sour cream and fresh dill on the side for a cool, creamy contrast.

Directions

Mix all ingredients except garnish together.

Form into loaf and lay atop meat rack or use foil handles.

Cook turkey loaf for 8 to 10 hours on Low or 5 to 6 hours on High.

To ensure doneness insert meat thermometer in loaf.

Thermometer should read 180 degrees F. to indicate doneness.

Serve with sour cream if desired.
