Soba Noodles with Cucumbers
Quick, easy to make, and it tastes refreshingly delicious. Serve it as a side dish or a light yet tasty meal. 20
soy sauce, tamari
hot pepper sesame oil
fresh, finely minced
seedless, quartered, diced
Cook the noodles in a large pot of boiling water until tender.
Whisk together the soy sauce, hot pepper oil, vinegar, ginger and sesame oil and toss with the warm noodles.
Add the cucumber and top with the sesame seeds.
Serve at room temperature.
