Skillet Peas with Red Onion and Mint
This quick and easy sauteed peas are very tasty, red onions and fresh mint are great accompaniments. The dish comes out refreshing and flavorful!
Ingredients

red onion
finely chopped |

garlic
or to taste, minced or finely chopped |

peas, frozen
or fresh, shelled, 1 pound |

stock
chicken or vegetable |

sugar
generous pinch |

mint leaves
fresh, finely chopped |

butter

lemon juice

Directions
Add the vegetable oil in a large nonstick skillet over medium-high heat until hot.
Add the red onions, stirring often, cook until the onions are tender, 2 to 3 minutes.
Stir in the garlic, and cook for about 40 seconds.
Add the peas, pour the broth, and the sugar.
Stir until well mixed.
Cover and simmer until the peas are very green and heated through, about 4 minutes.
Stir in mint and butter until well combined.
Remove from the heat, and add the lemon juice.
Adjust seasoning with salt and black pepper to taste.
Serve and enjoy!
