30 minThis shrimp and chicken paella cheats in the best possible way. Instead of rice simmering on the stovetop for 30 minutes, quick-cooking couscous stands in and soaks up all the classic paella flavors in just five minutes off the heat.
The microwave is the unexpected hero here. Chicken breast cooks in broth and water first, then shrimp joins with peas, red bell pepper, green onions, garlic, and a pinch of precious saffron for the signature gold color and honeyed aroma. By the time the shrimp turn pink and curl, the broth is infused with saffron and sweet vegetables. A cup of couscous goes in, the lid goes on, and five minutes later dinner is done.
It’s weeknight genius, especially in summer when no one wants to babysit a hot stove.

Stir in shrimp and next 7 ingredients; cover and cook 5 min. or until shrimp is done (turns pink). Stir in couscous; cover and let stand 5 minutes.
