Secret Kiss Cookies
Secret kiss cookies hide a whole chocolate kiss inside a buttery, walnut-flecked shortbread, baked until just set and rolled in powdered sugar. Bite in and the soft chocolate center is the surprise. A Christmas cookie tin favorite.

The dough is essentially a tender shortbread, rich with butter and a little chopped walnut for texture. Chilling it for a couple of hours is the step that makes wrapping possible, since cold dough holds its shape and seals neatly around the candy instead of sliding off.
Take care to encase each kiss completely, pinching the dough shut so no chocolate peeks through. Leave a gap and the melted center leaks out as the cookies bake.
Bake them just until set, never browned. These should stay pale and tender, more melt-in-your-mouth than crisp.
Roll them in powdered sugar while still warm so the first coat clings, then roll again once cool for that classic snowball finish. Inside waits the soft chocolate surprise.

Ingredients
Directions
Beat butter, sugar and vanilla at medium speed until light and fluffy.
Add flour and nuts if using, on low speed until well-blended.
Chill dough 2 hours.
For each cookie, use about 1 tablespoon of dough to encase one candy piece completely.
Place on ungreased cookie sheet.
Bake at 350℉ (180℃). until set but not brown, about 8- 10 minutes.
Remove and roll in powdered sugar.
