Directions

Cook tortellini according to package directions. Drain in a colander.

Meanwhile, position oven rack in the top ⅓ of the oven and pre-heat the broiler.

Melt the butter in a saucepan over medium heat. Once the butter is sizzling, whisk in the flour and, cook for about 1 minute, whisking constantly.

Slowly whisk in milk, then add the minced garlic, nutmeg, salt, and black pepper. Cook, continuously whisking until the mixture is thickened and just begins to boil. Reduce heat and simmer for 2 minutes.

Remove from heat; stir in ¼ cup cheddar and the Parmesan cheeses.

Stir in the cooked tortellini and parsley and mix well.

Transfer mixture to shallow 1½-quart casserole dish.

Combine the remaining ¼ cup of cheddar cheese and the bread crumbs in small bowl; sprinkle on top of casserole.

Broil for 1 to 2 minutes, until topping is golden, crispy, crusty and delicious. Watch constantly to prevent over broiling, it doesn’t take long!

Serve.
