This fig-strawberry preserve is a Southern country-kitchen trick that’s been quietly making fig harvests stretch into winter for generations. Three cups of mashed figs get sweetened with sugar and bound with strawberry Jello, and the gelatin in the Jello does the work of pectin while adding strawberry color and flavor that real fresh figs would never deliver alone.
The technique is genius in its simplicity. Three minutes of hard boiling activates the gelatin and dissolves the sugar completely, then the hot mixture goes straight into jars to seal. No pectin packets, no testing for the gel point, no fussing with thermometers. The Jello does all the heavy work for you.
The finished preserves taste like the kind of fruit jam you can’t buy at the store. The figs bring honeyed depth and that signature seedy crunch, while the strawberry gelatin adds bright fruit-forward sweetness that lifts everything. Serve on toast, biscuits, scones, or alongside cheese boards.
Pro Tips
- Use ripe figs that yield to gentle pressure. Underripe figs taste flat and won’t mash smoothly.
- Stir constantly during the boil to prevent the sugar from scorching at the bottom of the pan.
- Sterilize your jars in boiling water before filling. Hot preserves into cold jars can crack the glass.
- Skim any foam from the top before pouring into jars. Skipping this leaves cloudy preserves with white scum on the surface.
- Store sealed jars in a cool dark spot for up to a year. Once opened, refrigerate and use within 3 weeks.
Variations
- Use raspberry or peach Jello instead of strawberry for different flavor profiles.
- Add 1 tablespoon of fresh lemon juice with the figs for brighter acidity.
- Stir in ½ teaspoon of grated fresh ginger for warm spice undertones.
