Old-fashioned popcorn ring pressed into a mold and studded with spiced gumdrops, mini marshmallows, and whole pecans. A sticky-sweet caramel popcorn centerpiece for holiday gatherings.

25 minHoliday treat that lands somewhere between a Rice Krispie square and a caramel corn ball. Popped popcorn gets tossed with mini marshmallows, spiced gumdrops, and whole pecans, then drenched in a hot butter-sugar-Karo caramel. Press the sticky mix into a buttered ring mold while it’s still warm, flip it onto wax paper, and you’ve got a centerpiece-worthy dessert for the kids’ table.
The spiced gumdrops matter here. They add small pockets of clove and cinnamon that stop this from tasting like straight sugar. Whole pecans bring richness and crunch, while the marshmallows melt slightly into the hot caramel for a softer, chewier bind than caramel corn usually has.
You can shape it into individual balls with damp hands if a ring mold isn’t your speed.
Kitchen Tips
- Use fresh, fluffy popcorn with no unpopped kernels. Old popcorn turns chewy, and any stray hull becomes a tooth-chipper in the finished ring.
- Butter the mold heavily. Caramel glues itself to metal, and undergreased molds are why grandma’s ring used to come out in chunks.
- Work fast while the caramel is still warm. It sets quickly and won’t press smoothly once it cools.
- Damp hands, not wet. Too much water and you’ll dissolve the caramel coating where you touch it.
Variations
- Swap pecans for salted peanuts or cashews for a saltier counterpoint.
- Use regular gumdrops if you can’t find spiced, and add ¼ teaspoon cinnamon to the hot caramel.
- Press into a square pan and cut into bars for lunchbox-friendly portions.
Ingredients
Directions
Put popped popcorn, marshmallows, gumdrops, and pecans (optional) in large bowl.
Melt butter, add sugar and Karo, bring to a boil, stirring and simmering 3 minutes, add vanilla, pour over popcorn.
Mix well, let stand 2 minutes to cool.
Press into buttered ring-mold.
Unmold onto wax paper.
Decorate with cut gumdrops. Or make balls with slightly dampened hands.
