Ingredients

1 cup cornmeal
yellow
17 ounces corn kernels, canned
whole
½ teaspoon baking soda
¾ teaspoon salt
1 each jalapeño pepper
chopped

2 large eggs
beaten
1 cup buttermilk
1 x pimentos
chopped

½ cup margarine
melted
1 cup cheddar cheese
grated
1 medium onions
chopped

Directions

Mix all ingredients except cheese.

Pour into a well-greased 9x9 inch pan.

Place the 1 cup cheese on top.

Bake at 350℉ (180℃) for 45 minutes.
