Preheat oven to 425 degrees F (220 degrees C).
Add butter and vegetable oil into a 9×13 inch baking pan, and swirl to evenly coat the bottom.
Whisk together egg, milk and pepper in a medium bowl.
Dip pork chops completely in egg mixture, coat with stuffing mix evenly and arrange in pan.
Bake for 10 minutes.
Turn chops over and bake for another 10 minutes, or until no pink remains in the meat and juices run clear.
Serve warm with your favorite dipping sauce if desired.
