Oven-Baked Herb Potatoes
It was crispy and delicious. I did increase the temperature of the oven to 425 degrees F after the first 20 minutes, and kept baking the potatoes for additional 15 minutes or so to make the potatoes nicely browned and crispy. So you probably can just bake these potatoes at 425 for 25 minutes or until desired crispiness.
Slice the potatoes about ¼ inch thick.
Brush the slices with the vegetable oil.
Place in a baking pan.
Sprinkle with the thyme and oregano.
Bake in a 400-degree oven for 15 to 20 minutes, or until tender.
