Oatmeal-applesauce bread machine loaf folds rolled oats, applesauce and cinnamon into a slightly sweet sandwich bread that bakes hands-off. Makes one tall, soft loaf for everyday slicing.

60 minA bread machine loaf that brings the flavors of an oatmeal cookie to sandwich bread without crossing into dessert territory. Applesauce keeps the crumb soft and adds a faint orchard sweetness; the rolled oats give it texture and fiber. Cinnamon ties the two together so each bite reads warm and homey, like the inside of a coffeehouse muffin.
The loading order matters in a bread machine. Liquids and oil go in first, dry ingredients on top, salt away from the yeast, and yeast last on its own pile or in the dispenser. Salt directly contacting yeast kills the leavening action before the cycle starts kneading.
Bake on the Rapid setting if the machine has one. The added moisture from applesauce can run heavy in longer cycles, leaving the loaf gummy through the middle.
Pro Tips
- Use unsweetened applesauce. Sweetened versions throw off the moisture-to-sugar ratio and the loaf can over-brown.
- Bring water and applesauce to lukewarm before adding. Cold liquids slow yeast activation and the loaf may not rise fully.
- Use bread flour, not all-purpose. The higher protein content provides the structure to support the heavy applesauce.
- Cool fully on a rack before slicing. Bread machine loaves carry moisture in the center and tear when cut hot.
Variations
- Stir in raisins or chopped dried apples at the mix-in beep for a fruitier loaf.
- Swap a cup of bread flour for whole wheat for a heartier, nuttier crumb.
- Top with a sprinkle of oats and brushed milk before the final rise for a bakery-style finish.

Place all ingredients except yeast in baking pan in order listed.
Place yeast in receptacle. Bake on Rapid.
For other machines, place ingredients in order required by the machine you use.
It might be interesting to try Peaches and Cream, or Strawberries and Cream or some of the others for a different taste.
This is a slightly sweet bread, but goes good with everything.
