A delicious ginger bread is made with whole wheat flour, several spices, brown sugar and molasses. It’s moist, tasty and packed with flavor. A great snack or a lighter dessert with a cup of coffee.

Directions

Preheat oven to 350°F.

Coat an 8-by-11½-inch baking pan with cooking spray or lay with baking mat.

Add whole-wheat flour, all-purpose flour, baking soda, ginger, cinnamon and salt in a bowl and whisk until well mixed.

Add egg, sugar and oil in a large bowl.

Beat with an electric mixer on high speed until thick and creamy.

Reduce speed to low and beat in molasses and applesauce.

Slowly mix the dry ingredients and buttermilk into the egg mixture with a rubber spatula, making 3 additions of dry ingredients and 2 additions of buttermilk. (Do not overmix.)

Scrape the batter into the prepared pan.

Bake until a wooden stick inserted in the center comes out clean, 40 to 45 minutes.

Remove from the oven and transfer on a wire rack, and allow to cool for a few minutes in the pan.

Serve warm.
