An easy pot pie that uses up leftover turkey and mashed potatoes. Instead of a complicated pastry it uses the mashed potatoes instead. I always cook extra mash knowing it easy to pair with my leftover turkey.

Ingredients

mashed

slightly beaten

CUP ML MAYONNAISE

TABLESPOON ML LEMON JUICE

diced *

CUPS ML CELERY
chopped

CUP ML GREEN PEAS
cooked, drained

CUP ML CHEDDAR CHEESE
grated

Directions

Cook and mash potatoes, or used leftovers.

Stir in egg.

Spread in well oiled 9-inch pie pan.

Bake at 375℉ (190℃) F for 10 minutes.

Combine mayonnaise and lemon juice; stir in turkey, celery, and peas.

Spoon into potato crust.

Top with cheese.

Continue baking 15 to 20 minutes or until hot through.
