The batter uses bran muffin mix as a base, dressed up with honey and an egg (or egg replacer for a vegan option). The honey adds a floral sweetness that complements the earthy bran flavor better than plain sugar would.

The apple butter sinks slightly into the batter during baking, creating a gooey center that’s concentrated and caramelized. It stays molten when warm and sets into a soft, fruity layer once cooled.

Directions

Prepare bran muffin mix according to package directions.

Before baking, spoon 1 teaspoon apple butter (or favorite flavor) into center of the unbaked muffin.

Bake at 350℉ (180℃). for 25 to 30 minutes.
