45 minThese bran muffins hide a sweet surprise in the middle. A teaspoon of apple butter spooned into the center of each unbaked muffin creates a warm, jammy pocket that oozes when you break the muffin open. It’s a simple trick that turns a basic box mix into something that feels homemade and special.
The batter uses bran muffin mix as a base, dressed up with honey and an egg (or egg replacer for a vegan option). The honey adds a floral sweetness that complements the earthy bran flavor better than plain sugar would.
The apple butter sinks slightly into the batter during baking, creating a gooey center that’s concentrated and caramelized. It stays molten when warm and sets into a soft, fruity layer once cooled.
Kitchen Tips
- Spoon the apple butter right into the center of each filled muffin cup, not on top. It should be surrounded by batter so it bakes into the interior, not onto the surface where it would burn.
- Don’t stir the apple butter into the batter. You want a distinct pocket, not a flavored muffin.
- Fill muffin cups about two-thirds full before adding the apple butter. This leaves room for the muffin to rise around the filling.
- These are best served warm when the apple butter center is still soft and gooey.
Variations
- Use strawberry jam, raspberry preserves, or orange marmalade instead of apple butter for different flavor pockets.
- Add a crumble topping (butter, flour, brown sugar) before baking for a coffeecake-style finish.
- Stir chopped walnuts or raisins into the batter for extra texture.
