Ingredients

¼ cup butter
4 medium apples
peeled, sliced
½ onions
red, chopped

1 head red cabbage
head, finely shred

1 cup red wine

4 whole cloves

cup brown sugar

2 bay leaves

¼ cup vinegar
¼ cup butter
lemon
juice of half

Directions

Melt butter in 4-quart Dutch oven. Add apples and onions, sauté slightly. Add finely shredded cabbage, red wine, cloves, sugar, and bay leaves.

Simmer, covered, for 1 hour, then add the remaining ingredients. Heat to melt the butter and serve immediately.

In addition to the bay leaves and cloves, I also use 6 whole peppercorns and 2 whole allspice, gather all in a cheesecloth bouquet garni and drop it right in the pot. This is also suitable to do in a slow cooker. Cook on low heat for 6 hours; stir well and cover; continue to cook for another 2 hours on low. I then add a cornstarch slurry (2 tsp. cornstarch mixed with 2 tsp. cold water) to thicken it up (cook on high for 20 minutes). This is a great side dish to any German schnitzels.
