Garlic Dip - Greek Style
This dip is good on almost everything IF you like garlic. We dip unsalted pretzels as well as pita chips and or vegetable cudites. It also makes an excellent base for brushetta.

Directions
- Use a heavy duty bleander or food processor.
- Finely chop cloves of garlic
- Slowly add olive oil, mixture will appear to be emulsified.
- Slowly add vinegar. (Mixture will be thick, you may add a little water to thin)
- Add the crackers to the mixture about a cup at a time.
- Finished amount will be the consistancy of sour cream, you may choose to add a little water to make the dip a little thinner.
- Add salt and pepper to taste.
- Store in glass or plastic overnight. If you like garlic, you will love this! Can be used for crackers, pretzels, pita chips, or vegetables. We continue to use it on everything. My husband spread it on steaks before grilling them.
