Here’s a baking hack worth remembering: a waffle iron makes better drop cookies in three minutes than an oven makes in twenty. Scoop dollops of chocolate cookie dough onto a hot, oiled waffle iron, close the lid, and pull them out a few minutes later with that classic grid pattern imprinted on both sides. They’re crisp at the edges, tender in the middle, and they taste like cookies but look like tiny chocolate waffles.

The dough itself is straightforward: margarine or butter creamed with sugar, Eggbeaters (or regular eggs) for binding, cocoa powder and vanilla for flavor, flour and baking powder for structure. A pinch of cinnamon adds warmth without making the cookies taste spiced.

No waffle iron? The same dough bakes on a greased sheet for 20 minutes at the standard cookie temperature. But the waffle iron version is worth trying once. It’s fast, it’s fun, and kids will lose their minds.

Directions

Cream margarine until light - then beat in sugar.

Add eggs or Eggbeaters, vani lla and dry ingredients.

Beat until well mixed. Heat waffle iron about 5 minutes.

Spray waffle iron each time a new batch of cookies is baked with and pan coating to prevent sticking.

Drop a heaping teaspoon of dough onto each section of waffle iron do not spread out dough, bake 2- 3 minutes.

These may be baked on a greased cookie sheet also for 20 minutes.
