Serve this rich and creamy shrimp over cooked rice, toast points or pasta.

Ingredients

¼ cup celery
minced
¼ cup onions
minced
1 pound shrimp
medium, peeled and deveined, tails removed
1 x nonstick cooking spray
for pan

1 teaspoon old bay seasoning
*
½ teaspoon paprika
1 x soup, cream of shrimp
condensed, 1 can undiluted
*
¼ cup sherry
dry, or white wine
*
3 ounces cream cheese (reduced-fat)
softened
teaspoon black pepper
or to taste

Garnish
¼ cup chives
chopped, or chopped fresh parsley or sliced scallions
*
1 teaspoon paprika
optional

Directions

Preheat a large sauté pan over medium-high heat for 2 minutes. Spray with cooking spray. Sauté the celery and onion until just tender-crisp.

Add to same pan the shrimp; sprinkle over with the Old Bay seasoning and paprika. Cook, stirring often, for 2 minutes.

Stir in soup, sherry or wine and cream cheese; mix until smooth and well blended. Add black pepper. Reduce heat and simmer 3 minutes.

Spoon over cooked rice, lightly-buttered toast points or cooked pasta. Garnish and serve immediately.
