Directions
In a saucepan, heat oil over medium high heat.
Add the couscous and cook, stirring until fragrant and beginning to become toasted, about 4 minutes.
Add the peas and stock, bring to the boil, reduce heat, cover and simmer until the stock is absorbed and the couscous is tender, about 10 minutes.
Add salt and fresh ground black pepper to taste. Serve warm, plain or garnished with your favorite herbs, your favorite cheese or drizzle with a good olive oil.
