The crockpot does the work. You season a pork loin with salt and pepper, pour fresh cranberries, honey, orange zest, cloves, and nutmeg over the top, and walk away. By dinnertime the pork is fork-tender and swimming in a glossy ruby-red sauce that tastes like Thanksgiving collapsed into a slow cooker.

The cranberries are doing double duty here. As they break down they turn the cooking liquid into a sweet-tart sauce that bastes the pork from underneath, and the natural pectin gives that liquid body so it actually clings to the meat instead of running off. Honey rounds out the tart edge, and the orange-clove-nutmeg trio is straight off the holiday spice shelf. Pork loin is lean and quick to dry out at the wrong temperature, but the long, low simmer keeps it juicy. A fattier pork shoulder gives you pulled-pork results if that’s more your speed.

Pro Tips

  • Sear the roast in a hot skillet before it hits the crockpot. A few minutes of browning per side adds depth that slow cooking alone can’t build.
  • Use fresh or frozen whole cranberries, not canned cranberry sauce. The texture and acidity are completely different.
  • Skim fat off the sauce after cooking and reduce it in a saucepan for an extra-glossy gravy.
  • Slice across the grain to keep the meat tender on the plate.

  • Swap cranberries for cherries or chopped Italian plums for a different fruit profile.

Directions

Sprinkle roast with salt and pepper. Place in crockpot. Combine remaining ingredients; pour over roast. Cover and cook on low for 8 to 10 hours.
