These cookies skip refined sugar entirely. The sweetness comes from grated fresh apple folded into the dough plus a couple tablespoons of granulated artificial sweetener, which makes them a workable cookie option for anyone managing blood sugar.

Three warming spices do most of the flavor work: cinnamon for backbone, nutmeg for a slightly nutty edge, and ground cloves for that distinctive baked-apple aroma. The combination is closer to a Dutch apple pie than a typical sugar cookie.

Directions

Cream shortening, egg, sugar substitute and butter; add buttermilk and mix in flour and baking soda, apple, salt, cinnamon, nutmeg, soda, cloves and vanilla. Drop on greased cookie sheet. Bake 7 to 8 minutes at 375℉ (190℃).
