Ingredients

1 cup all-purpose flour
1 cup cornmeal
1 teaspoon baking soda
1 teaspoon baking powder
½ cup sugar
¼ cup vegetable shortening

1 cup buttermilk
1ea eggs

2 cups carrots
shredded
1 cup pineapple
crushed

Directions

Cream sugar and shortening together; add egg, buttermilk, dry ingredients; then add carrots and pineapple.

Place in greased and floured slow cooker baking pan.

Cover and cook on high for 2 to 3 hours.
