Directions

Combine turkey, celery, apple, scallions, mayonnaise, yogurt, curry powder and lemon juice in a medium bowl and stir until well mixed.

Season with pinch of salt and black pepper, or to taste.

Toast bread in toaster oven, then butter bread slices, trim off crusts if desired.

Spread the turkey mixture evenly on each of four slices.

Top with the remaining 4 slices.

Cut each into 4 triangles or squares if needed.

Serve.
