Here’s an old slow-cooker trick that sounds strange and works like a charm: a can of lemon-lime soda. Poured over stewing beef with cream of mushroom soup and onion soup mix, the soda’s mild acidity helps break the meat down to fall-apart tender while its sweetness rounds out the gravy.

It’s about as hands-off as cooking gets. Everything but the fresh mushrooms goes in at the start and cooks low for hours, then the mushrooms join near the end so they keep some bite instead of disappearing into the sauce.

The cream of mushroom soup pulls double duty, melting into a thick, savory gravy with no roux or whisking required. Serve it over rice, noodles, or mashed potatoes to catch every drop.

Pro Tips

  • Add fresh mushrooms only in the last hour so they hold their texture; canned mushrooms can go in at the start.
  • Don’t add extra liquid. The beef and soup release plenty as they cook down.
  • Searing the beef first isn’t required, but it adds a deeper, roastier flavor if you have the time.

Directions

Add the stewing beef, cream of mushroom soup, can of soda (Sprite or equiv.) and onion soup mix into a crockpot and stir.

Cook on the low setting for 4 to 5 hours. S

Stir gently and add the fresh mushrooms. Set slow cooker temperature to high and cook for another hour.

If desired you can use canned mushrooms. In that case add all ingredients to the slow cooker and cook on low for 7 to 8 hours.
