This crustless version skips the crust entirely and goes straight for the good stuff: a rich custard of eggs, heavy cream, and a triple hit of Swiss, cheddar, and Parmesan.

Crispy microwave bacon gets crumbled on top, and the whole thing cooks in the microwave in about 12 minutes.

It puffs up golden, sets into a silky wedge, and tastes like brunch at a French bistro.

Directions

Power level High (100%).

Microwave bacon on High (100%) for 5 to 6 minutes or until crispy.

Crumble and set aside.

Mix together remaining ingredients.

Pour into a buttered 10-inch pie plate or quiche dish.

Sprinkle top with crumbled bacon.

Microwave on High for 10 to 12 minutes.

Allow to stand 5 minutes or until completely set.
