Ingredients

2 large cucumbers
peeled
2 cups yogurt, plain
low-fat
4 tablespoons vinegar
3 teaspoons dill weed
2 cloves garlic
crushed
1 teaspoon salt
½ teaspoon black pepper
freshly ground

Directions

Slice cucumber lengthwise and remove seeds.

Dice the cucumber and add remaining ingredients.

Mix throughtly and chill at least ½ hour before serving.

Creamy and delicious. Served it with a curry rice salad, it was such a refreshing accompaniment. I used nonfat Greek yogurt, and didn't add dill, still very tasty. This cucumber salad will be good with Greek or Indian food. If you don't like it too thick, use regular yogurt.
