Directions

This recipe is easy to scale up or down.

Heat a large skillet over medium heat, add the sausage (casings removed and broken apart) and brown for about 8 minutes.

Remove the sausage with a slotted spoon onto a plate lined with paper toweling. Pour off and discard any grease (leave the fond in the pan).

Meanwhile cook pasta according to package directions.

Add the olive oil to the skillet and heat until shimmering.

Add the onion and cook until softened, about 5 minutes. Add the garlic and red pepper flakes, cook until fragrant, about 30 seconds. Add the wine and simmer until the liquid is mostly evaporated, about 2 minutes.

Add the chicken stock and the cream. Simmer until the sauce is slightly thickened (like a light cream), stir in the sausage and peas and cook for about 2 minutes.

Remove from heat, taste and adjust seasoning with black pepper.

Drain pasta well and toss with the sauce to serve.
