A gently seasoned homemade Italian sausage. Fennel seeds, oregano and a bit of garlic. Perfect for making up a batch of bulk Italian sausage for use in other recipes.

Ingredients

2 teaspoons salt
1 teaspoon black pepper
4 teaspoons fennel seeds
4 teaspoons oregano
1 teaspoon garlic powder
8 pounds pork shoulder

Directions

Cut the pork into 1½ inch cubes.

Sprinkle combined seasoning on pork and toss to distribute.

Grind.

Shape sausage into patties.
