80 minSometimes the smartest move in the kitchen is starting with a box mix and making it your own. This recipe does exactly that.
A fudge cake mix gets a serious boost from whipped topping mix, extra eggs, vanilla, and a touch of butter flavoring. Beat it all together for four minutes and that mixer does the heavy lifting. The result? A crumb so moist and tender it barely needs frosting.
But of course you’re going to frost it anyway. Chocolate frosting spread between two layers and slathered on top gives you that classic, towering layer cake look.
Chef Tips
- Beating for the full 4 minutes is key. It builds structure and incorporates air for a lighter cake
- Let the layers cool completely on wire racks before frosting or the heat will melt your frosting into a puddle
- For an even richer cake, swap the water for brewed coffee. It deepens the chocolate flavor without tasting like coffee
Ingredients
Directions
Combine all ingredients except frosting in a large mixing bowl; beat 4 minutes at medium speed of an electric mixer.
Pour batter into 2 greased and floured 9-inch round cakepans.
Bake at 325℉ (160℃) for 35 minutes or until a wooden pick inserted in center comes out clean.
Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks.
Spread frosting between layers and on top and sides of cake.
