Cajun Potato, Prawn and Avocado Salad

 

This delicious dish is quick and easy to make, and it's perfect for lunch or supper.

Ingredients

300 grams potatoes
1 tablespoon olive oil
8 ounces shrimp
cooked and peeled, about 250 grams
2 cloves garlic
minced
2 scallions, spring or green onions
finely sliced

2 teaspoons cajun seasoning

1 avocados
peeled, stoned and diced

1 cup alfalfa sprouts
salt
as needed, to boil potatoes

Directions

Cook the potatoes in a large saucepan of lightly salted boiling water for 10 to 15 minutes or until tender, drain well.

Heat the oil in a wok or large nonstick frying pan/skillet.

Add the prawns, garlic, spring onions and cajun seasoning and stir fry for 2 to 3 minutes or until the prawns are hot.

Stir in the potatoes and cook for a further minute.

Transfer to serving dishes and stir in the avocado and top with the alfalfa sprouts and serve.

I have done this recipe a few times although without the sprouts. It is wonderful! Best to use baby new potatoes and cut them in half before cooking.
